A lovely little Winter Warmer

So as these nights draw in here's a little something to warm you up!

Its a bit of a family favourite and seems to go down well anywhere. Despite the initial reactions to its rough translated name " Egg and lemon soup".


For this you will need.

4 or 5 medium sized white potatoes, depending on how hungry you are.
2 or 3 eggs
2 or 3 lemons
1 large onion
1 vegetable or chicken stock cube
a hand full of rice
between 250 - 400 grams of minced beef
and some flat leaf parsley
plus salt and pepper.


So here goes.

1- peel and roughly chop your large onion and place in a large( deep) pan.
2- peel and chop potatoes into quarters then also place in the large pan.
3- Cover potatoes and onion with water and bring to the boil.
4- add stock cube of your choice and throw in the rice also.
5- whilst the potatoes are boiling you can make some meatballs with the mince beef just add a good helping of salt and pepper to the beef and maybe some finely chopped parsley. once you have your meat balls made leave to one side.
6- when your potatoes are about five minutes from being cooked add your meatballs to the pan an leave to simmer for about five to ten mins.then turn of the heat under your big pan.
7- Into a bowl break your eggs 2 or 3, i prefer 3 then add the juice of two lemons. Whisk together until blended.
8- now the tricky part. with a ladle slowly add the hot liquid to the egg and lemon mix whilst whisking all the time. if you stop whisking the eggs will cook to fast and go stringy. keep doing this until you have a bowl full of what should be hot egg and lemon mixed with potato water.
9- you can then add this mixture back into the large pan whilst stirring. dont worry if your potatoes start to break up this is fine.
10- You should now have a big bowl full of an off white thick soup with meatball and potatoes in it. add your chopped parsley and a big squeeze of lemon juice to your desired taste.

Sit down and enjoy with some crusty thick bread. thats what i'm doing for tea tonight.
